Johnny's wife, Carine's family also specialise in Pinot Noir and produce champagne Michel Guilleminot, a high class Blanc de Noirs known for consistent quality and good value for money. Champagne Guilleminot's vines are located in the Aube Valley called the 'Côte des Bars', the southern part of Champagne where pinot noir grows beautifully. In order to be different from the traditional blend of pinot noir, pinot meunier and chardonnay, her parents Michel and Colette decided to plant their vineyard with pinot noir only and focus therefore on the production of Champagne Blanc de Noirs (100% pinot noir), Guilleminot's speciality! The grapes are hand-picked and vinified in our own cellars which enable us to have a great quality control. Malolactic fermentation is purposely not undertaken to preserve all the natural components of the wine. After bottling, champagne Guilleminot rests peacefully on its lees for a minimum of three years during which the champagne has time to naturally loose some acidity and achieve a great balance. This is a high quality product which eclipses many of the well-known Champagne brands.
